Flour is the ingredient where technique matters most, and it is the reason two careful cooks can follow the same recipe to the letter and pull very different things out of the oven.

Three methods, three different weights

A US cup of all-purpose flour weighs roughly:

That is a 30 gram spread β€” 27% from lightest to heaviest β€” on the single most important ingredient in most baking. In a cake calling for three cups, the gap between the lightest and heaviest technique is about 90 grams, which is most of an extra cup of flour.

Why the difference exists at all

Flour is a fine powder that settles under its own weight. A bag that has sat in a cupboard for a month is significantly more compacted at the bottom than it was when packed.

When you push a measuring cup down through that flour, you compress it further against the walls and base of the cup. Nothing looks different β€” the cup is full and level either way β€” but you have loaded considerably more flour into the same space.

Sifting does the opposite, forcing air between the particles and lowering the weight the cup can hold.

The method to use

Unless a recipe explicitly says otherwise, assume spoon-and-level. It is what the overwhelming majority of published recipes are developed and tested with:

  1. Stir the flour first, in its bag or container. This breaks up the compaction from storage and is the step almost everyone skips. Without it, even careful spooning gives inconsistent results.
  2. Spoon it lightly into the cup. Let it fall in. Do not shake the cup to settle it, do not tap it on the counter, do not press down with the spoon.
  3. Level the top with the back of a knife or any straight edge, sweeping the excess back into the container.

Done properly this lands within a few grams of 120 per cup, consistently.

What not to do

Do not scoop the measuring cup through the flour bag. It is faster, it is how most people were taught, and it is the single most common cause of dry, dense home baking. The cup arrives full and looking perfectly normal while holding an extra sixth of a cup of flour.

If your cakes are reliably drier than they should be, or your cookies spread less than the photos suggest, this is the first thing to change.

"Sifted flour" and "flour, sifted" are different quantities

The word order genuinely matters, and recipe writers use it deliberately:

  • "1 cup sifted flour" β€” sift first, then measure the sifted flour. You get about 110 grams.
  • "1 cup flour, sifted" β€” measure first, then sift what you measured. You get about 120 grams.

A 10 gram difference per cup is small in one batch of muffins and significant in a delicate sponge, which is exactly where recipes tend to specify sifting.

Different flours, different weights

The 120 gram figure is for all-purpose flour. Others vary because the grind and protein content differ:

Substituting cup-for-cup between these is not a like-for-like swap. Bread flour for cake flour by volume adds about 13 grams a cup on top of the protein difference.

Humidity is real but small

Flour absorbs moisture from the air, so the same cup genuinely weighs slightly more on a humid day. The effect is a few grams β€” far smaller than the technique difference, and not worth worrying about unless you are baking professionally. Fix your scooping habit first; it is worth ten times as much.

How to check your own technique

You can test yourself in about a minute, and the result is usually surprising. Measure a cup of flour the way you normally would, then tip it onto a scale.

  • Around 120 g β€” your technique matches what recipes assume. Nothing to change.
  • 130–145 g β€” you are scooping or tapping the cup. This is the most common result.
  • Under 110 g β€” you are measuring very lightly, or the flour was recently sifted.

If you have been baking for years with a consistent 140 g cup, your recipes have quietly adapted to it. Switching to spoon-and-level will change your results, so change one recipe at a time rather than everything at once.

Signs you have been over-measuring flour

Consistent symptoms across different recipes point at technique rather than the recipes themselves:

  • Cakes that are dry and close-textured even when not overbaked.
  • Cookies that stay in domes instead of spreading.
  • Batters noticeably stiffer than the recipe describes.
  • Pastry that cracks when rolled rather than stretching.
  • Bread dough that needs extra water to come together.

That last one is a particularly clear signal. If you routinely add water beyond what a bread recipe specifies, you are almost certainly starting with more flour than it intended.

The answer that removes all of this

Weigh it. Stirring, spooning, levelling and worrying about humidity all collapse into one action: put the bowl on the scale, press tare, add flour until it reads 120. It is faster than the cup method, it uses one fewer piece of equipment, and it is exactly repeatable.
